Scottish Peppermint Iced Tea
Everybody likes a glass of delicious ice tea on those days when you just can't seem to beat the unbearable heat of Summer closing in. Try this super easy and refreshing iced tea sweetened only with delicious honey.
As always I suggest purchasing local honey from a local farm or market so that you can reap some of the amazing health benefits that local honey has to offer!
Ingredients:
8 C. Filtered Water
4 Scottish Breakfast Tea bags
1 Organic Peppermint Tea bag
1 C. Local Honey
1 Organic Lemon (halved)
Ice
Directions:
-Place all 5 tea bags in a large sauce pan with water and bring to a rolling boil over med-high heat
-Remove from heat and stir in honey until completely dissolved
-Halve the lemon and gently squeeze the juice of the lemon into the sauce pan, watching out for seeds!
-Place both juiced halves of lemon into the sauce pan to enhance citrus flavor
-Reduce stove top heat and bring to a simmer over low for 5 mins.
-Remove tea bags
-Turn heat off and add 12-15 large ice cubes
-Cool in the refrigerator until refreshingly chilled
-Serve over ice and enjoy!
